Gamay de Roman\u00e8che, \u00e0 la fronti\u00e8re Sud de la Bourgogne, un assemble de raisins d’une parcelle de tr\u00e8s vieilles vignes en Gobelet et d’une toute jeune vigne. Elevage 8 mois en f\u00fbts.<\/p>\n

La Cuve en Ville \u00e0 Dijon est un projet unique initi\u00e9 par Ana\u00efs Bouchard. Associ\u00e9 \u00e0 Jonathan MOLLION, tout deux originaires de Chablis ils ont d\u00e9velopp\u00e9s ce projet dans un but p\u00e9dagogique et soci\u00e9tal. \u00ab\u00a0De la Cuve \u00e0 la Table\u00a0\u00bb<\/p>\n

Il s’agit d’un chai urbain biologique situ\u00e9 au c\u0153ur de Dijon, dans les caves du restaurant La Fine Heure. L’objectif est de r\u00e9introduire l’artisanat vinicole en ville, en produisant du vin \u00e0 partir de c\u00e9pages locaux cultiv\u00e9s en agriculture biologique.<\/p>\n

Ana\u00efs Bouchard met un point d’honneur \u00e0 travailler avec des vignerons partageant des valeurs communes, privil\u00e9giant le circuit ultra-court pour la distribution de ses vins. La production annuelle est limit\u00e9e, ce qui permet de vendre une bonne partie au restaurant La Fine Heure et dans un rayon de 150km.<\/p>\n","protected":false},"excerpt":{"rendered":"
